This is a very simple bread recipe to make in the Bosch Universal Mixer. Very tasty for a breakfast bread and also complements soup on a cold winter day.

Serves
6-8

Ingredients:

  • 5 c. warm water
  • 1/3 c. oil
  • 3 tbsp. dough enhancer
  • 1 tbsp. salt
  • 1 c. honey or maple syrup
  • 3 tbsp. Saf Instant Yeast
  • 1/2 c. gluten
  • 2 c. raisins
  • 3 tbsp. cinnamon
  • 12-14 c. whole grain flour (I used Spelt)

Directions:

  1. 1. Slowly mix the first five ingredients in a mixing bowl.
  2. 2. Mix in enough flour to make the consistency of a pancake mix.
  3. 3. Add the yeast.
  4. 4. Mix in additional flour until the dough pulls away from the side of the bowl.
  5. 5. Knead 5 minutes.
  6. 6. Add the raisins and cinnamon.
  7. 7. Knead for 2 more minutes.
  8. 8. Form into five loaves and place in well-oiled bread pans.
  9. 9. Let rise until double.
  10. 10. Bake at 350° for 30 minutes or until done.

Author's Notes:

I ground spelt in the Komo XL Grain Mill for this recipe. Freshly ground flour is not a must but it adds a lot of nutrition to this bread. I hope you enjoy this recipe as much as my family does!
