Beet, Goat’s Cheese & Caramelized Onion Pizza
Posted: June 13, 2019
Source: Ooni
Treat yourself to this sweet and savory pizza topped with seasonal beets, tart goat’s cheese and caramelized onions – the perfect flavors for a crisp Fall weather.
Yields
1, 12" pizza

Ingredients:

For the caramelized onions

  • 1 brown or white onion, thinly sliced
  • 1 tbsp. sugar
  • 2 tbsp. olive oil
  • Pinch of salt

For the pizza

  • 5.8 oz (165g) pizza dough ball
  • 3.5 oz (100g) goat’s cheese
  • 1 small beet (beetroot), cut into thin wedges
  • Handful fresh basil leaves
  • Freshly ground black pepper, to taste
  • Extra virgin olive oil, to taste

Directions:

  1. 1. Prepare your pizza dough ahead of time. To make a 12" pizza, we recommend preparing pizza dough balls that are 5.8 oz (165g) each – our perfect Classic Pizza Dough recipe covers everything you need to know.
  2. 2. For the caramelized onions, preheat your Ooni 3, Ooni Koda or Ooni Pro to 482°F (250°C). You can check the temperature inside your oven quickly and easily using an infrared thermometer.
  3. 3. Place a cast iron pan in your oven to preheat. Once heated, remove the pan from the oven. Add the olive oil, then the onion and salt, and stir well to coat the onion. Place the pan inside the oven for 10-15 minutes – stirring occasionally to prevent sticking – until the onions have sweated down and are translucent. Sprinkle over sugar and cook for a further 10 minutes in the oven until caramelized. Set aside.
  4. 4. Increase the heat of your oven up to 932˚F (500˚C).
  5. 5. Using a small amount of flour, dust your pizza peel. Stretch the pizza dough ball out to 12" and lay it out on your pizza peel. Top with the caramelized onion, goat’s cheese and beet.
  6. 6. Slide the pizza off the peel and into your Ooni pizza oven, making sure to rotate the pizza regularly.
  7. 7. Once cooked, remove the pizza from the oven. Scatter over the basil leaves and black pepper. Drizzle over the olive oil and serve straight away!
