Here's an easy cake to make when you have over-ripe bananas. This cake makes a tasty dessert and it's healthy enough to serve at breakfast too! It's good on its own or with cream cheese frosting.

Ingredients:

  • 1/3 c. oil
  • 3/4 c. agave, honey or cane sugar
  • 1 egg
  • 1 tsp. vanilla extract
  • 1 c. mashed bananas (about 3 bananas)
  • 1 c. buttermilk
  • 2 c. soft wheat flour (or other whole grain flour)
  • 1/2 tsp. salt
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1/2 c. chopped nuts, optional
  • 1/2 c. chocolate chips, optional

Directions:

  1. 1. Preheat oven to 350° F.
  2. 2. Grease and flour a 9 x 13 inch cake pan.
  3. 3. Beat together the oil, honey, egg and vanilla.
  4. 4. Add remaining ingredients and mix well.
  5. 5. Let batter stand for 5 minutes and then pour batter into prepared pan.
  6. 6. Bake for 25-30 minutes or until center springs back when touched.
