These are wonderful cookies you can eat for breakfast or as a healthy snack. They are dairy free, egg free, and are naturally sweetened with banana and maple syrup.

Ingredients:

  • 2 tbsp. ground flax seeds
  • 2 tbsp. chia seeds
  • 1/4 c. almond butter
  • 3 very ripe bananas
  • 1 tsp. vanilla extract
  • 2 tbsp. maple syrup
  • 4 tbsp. cacao powder
  • 2 c. rolled oats
  • 1/4 tsp. fine salt

Directions:

  1. 1. Preheat the oven to 350° F. Line two baking sheets with a parchment paper.
  2. 2. In a small bowl mix together flax and chia seed. Cover with water and set aside for 5 minutes.
  3. 3. In a large bowl mix together the bananas, almond butter, vanilla extract, and maple syrup.
  4. 4. Add soaked seeds and mix everything very well.
  5. 5. Finally, mix cacao powder, oats and salt into the mixture. Stir it for a bit so that all the oats well covered in cacao mixture.
  6. 6. Scoop the cookies onto the prepared baking sheets, twelve on each sheet.
  7. 7. Bake for about 15 minutes. Cool the cookies before transferring them to a plate or a cookie jar.

Author's Notes:

To make the rolled oats I use organic oat groats and the KoMo FlocMan Oat/Grain Flaker, so I have freshly flaked oats in no time. Every time my rolled oats are fresh and delicious!
