Ingredients:

  • 1-1 1/2 c. whole wheat flour (we suggest soft wheat flour that's been sifted)
  • 1 c. rolled oats
  • 1 tbsp. baking powder
  • 1/2 c. chunky applesauce
  • 1 egg
  • 1/2 c. milk
  • 3/4 c. frozen apple juice concentrate, thawed
  • 1/2 c. raisins, optional

Directions:

  1. 1. Preheat the oven to 400°F.
  2. 2. Combine dry ingredients, mix well.
  3. 3. Blend applesauce, egg, milk and juice concentrate and add to the dry ingredients.
  4. 4. Stir until just moistened.
  5. 5. Gently stir in raisins.
  6. 6. Spoon batter into greased muffin cups.
  7. 7. Bake 15-20 minutes.
