Homemade Tortellini with Ankarsrum Lasagna Roller

"To make the pasta sheets I used the Ankarsrum lasagna roller. It is the easiest and fastest way to make lasagna, ravioli or tortellini."


To make the pasta dough

  • 3 large eggs
  • 2 1/3 c. whole wheat flour (more as needed), extra for dusting and rolling out
  • 1 tbsp. olive oil
  • 1 tsp. fine salt
  • 1 tbsp. water (more as needed)

To make the filling

  • 1 c. ricotta cheese
  • scallions, chopped
  • cilantro
  • salt and pepper to taste

To serve

  • butter
  • vegetables of your choice
  • fresh herbs


  1. 1. Using the bowl of the stand mixer, with paddle attachment, add the eggs, whole wheat flour, olive oil, salt and water. Mix on low speed for a couple of minutes, or until the dough starts to come together. Switch to the dough hook attachment, and knead the dough for 4-5 minutes or until soft to the touch and pliable. If the dough is too sticky, add flour in small increments. If the dough cracks or seems too dry, add water in small increments until you reach the right consistency. Once your dough reaches the right consistency, form it into a disk and wrap it tightly in a piece of plastic wrap. Set aside for at least 30 minutes or up to 2 hours.
  2. 2. Unwrap your dough and place it on a floured surface. Cut it into 2 pieces. Flatten them out with your finger tips.
  3. 3. With the lasagna roller attachment fixed to your stand mixer and set to the lowest setting, insert the dough through the top. Once it goes through, fold the dough in half and run it through a second time. Repeat this step, flouring if needed, until the sheet is smooth and elastic. Increasing the roller setting one step thinner, insert the sheet again, but don't fold it over this time. Increasing the roller setting by another step, insert the sheet once again. Repeat these steps up to your desired thickness. For example, if preparing tortellini, you will want to go to the 5th setting.
  4. 4. Next you need to choose what kind of dish you are planning to make and shape your pasta dough accordingly for your recipe.
  5. 5. To cook the pasta, bring a large pot of salted water to a boil. Add the tortellini/ravioli and cook until al dente, about 2-4 minutes for fresh dough.
  6. 6. Serve with melted butter and your favorite vegetables. Top it with the parmesan cheese and fresh herbs.

Author's Notes

Tortellini can be filled with anything from plain ricotta cheese to cooked sausage. There are no rules here! If you're experimenting with making tortellini without a recipe, start with the ricotta cheese as your base and add other cheese, cooked meats, herbs, or seasonings to taste.
