Kuhn Rikon Turn-Top Model Details

Turn Top 1

Some foods should be cooked with the indicator knob showing one red line, as illustrated above. The band is visible from all four sides of the knob. The Kuhn Rikon cookbook tells what pressure to use for each food type. This handy-sized, spiral bound cookbook is included free with every Kuhn Rikon pressure cooker from Pleasant Hill Grain.

If the indicator knob rises to the level shown above, pressure is a little too high, so stove heat should be turned down.

When you want to reduce pressure in the Turn-Top model, just lift and rotate the knob. The ability to let go of the knob and have it remain in the venting position (releasing pressure) is the distinction of the Turn-Top models compared to the standard Kuhn Rikon cookers. The image above shows the cooker set to "slow release." Notice the two small "steam puff" icons on either side of the larger "steam puff" icon... setting the knob at either of the small icons accomplishes exactly the same thing.

Here the control knob of the Kuhn Rikon Turn-Top model cooker is set to the larger "steam puff" icon, which provides "fast release" of pressure. No matter how the knob is set, any released steam is directed downward and away from your hand. Kuhn Rikon Duromatic stainless steel pressure cookers can also be held beneath a running faucet (following the directions in the manufacturer's operating manual) to reduce pressure more quickly.
