This 70-mesh flour sifter has 8 cup capacity and sits on top of the mixer bowl. Starting with whole grain flour, the sifter will allow you to separate out the bran, producing very fine flour that's ideal for making pastries, cakes, and cookies. The remaining bran can then be used in a variety of other products including baked goods, smoothies, soups and casseroles. Please note that this accessory is not manufactured by Bosch. It carries a one year warranty from Pleasant Hill Grain against defects in materials or workmanship. The sifter shown here is for older-model Bosch Universal mixers.
Tip: Under the rim of the mesh disk are three short (1/8") pins that fit into three corresponding sockets in the hopper rim below. The pins need to be in the sockets before use, for the sifter to operate correctly. First align the slot of the sifter's drive shaft over the cross-pin of the mixer's shaft, then rotate the mesh disk until the pins drop into place. This is described in the user instructions, but we point it out because the pins are fairly small and would be easy to overlook.

I got this to make high-extraction bread flour. This takes care of my freshly-ground whole wheat flour quickly and relatively easily. The only reason I don't rate it 5 stars is that cleanup is kind of "fiddly". .. you can't wash the sifting screen, and it takes a bit of effort to get the flour out of the brush.
That said, it's a lot easier than standing around sifting flour through a strainer.
I grind my own grain. Sometimes I want to sift out the bran - bran can be hard on bread dough. So I've been doing it by hand for a while - tedious. Now I can sift enough flour for a double or triple recipe, all at one time. I'd say it is a bit fussy to clean, but worth it. Very fine mesh, #70, this is NOT like the "flour sifter" you cranked as a kid. This is almost like sifting through cloth (how the ancients made light flour).
Where has this been all my baking life?! Finally a sifter that allows me to use my freshly ground whole grain in all my baking! So much healthier and my family is not complaining about the texture! I then can use the separated bran in other cooking/smoothy needs so nothing is wasted and my baking is back up standards! Love this! Very easy to use and just tap it and it's clean. So much better than my hand sifter!
I love this sifter for it's fine mesh. It beautifully refines my soft white wheat into a flour fine enough to use my whole wheat in an angel food cake. I still replace 2 T of every cup of sifted flour with corn starch to make a DIY pastry flour. It's much healthier than purchased pastry flour. The remaining bran goes into my bread or hot breakfast cereal or muffins. It all gets used. As far as cleanup, all sifters will need some of that, so I don't mind. A few taps on the edge of the sink and the holes in the mesh are clear. I haven't figured out a quick way to clean the brush yet. But it's a good design that that part easily lifts out of the bowl. I love that everything else just goes into the sink of soapy water. Yay! I love my new sifter.
