If the Italians don't already say "It's the cat's pajamas" we think they'll start soon, just to describe their Famag mixers. These Italian-made spiral dough mixers are world renowned for strength, quality, and exceptional baking results. And now they’re available in the U.S. for the first time, with industrial duty motors designed specifically for U.S. voltage. As Famag's exclusive U.S. importer, PHG is proud to offer these high performance dough-making marvels! You'll call them the bee's knees and the cat's whiskers because they make the smoothest, silkiest dough you've likely ever seen—quickly and effortlessly, and in your kitchen.
Designed expressly for ideal dough mixing and kneading results, Famag mixers feature a spiral kneading arm that rotates while the bowl revolves, bringing the dough to the stainless steel dough hook with each revolution. An integrated breaker bar ensures ideal metering of the dough into the spiral hook. This three-way kneading process is exceptionally thorough and fast, yet the low impact and widely distributed dough contact of the spiral hook completely avoids overworking and overheating of the dough. Wide-range, infinitely variable speed adjustment lets you dial in precisely the action you want.
“A brilliant purchase. The Famag produces the most fantastic dough I have ever made. A positive window pane test is achieved in a quarter of the time. It's also really easy to clean. This mixer has reignited my baking passion.”
– Peter A., CA
HIGH HYDRATION OR HEAVY DOUGH
Thanks to the spiral hook’s action, mixtures that overtax other designs—such as pizza or bagel dough—are handled easily, quickly and efficiently in the Famag spiral dough mixer. Doughs of all kinds, from heavy to high-hydration artisan doughs, come out smooth, silky and perfectly developed.
Famag mixers feature a heavy duty chain overhead drive with a high torque dual-belt final drive. FAG sealed industrial ball bearings are used for exceptionally long life. Construction is robust throughout, as reflected by the substantial 77 lb. weight of the IM-8S. Epoxy powder coating over a steel cabinet protects the handsome appearance of your Famag mixer.
SUPER CAPACITY RANGE
Famag's IM-8S mixes and kneads up to 22 lbs. of dough, but also handles batches as small as 1.5 lbs. equally as well. In terms of flour capacity, this is 13 lbs. down to as little as 1 lb. of flour. Capacity of the stainless steel bowl is 11.5 quarts. The Famag's head section lifts high for bowl access and removal, and features lift-assist.

Expanded Ratings Descriptions
|R1||Very close scrutiny is required to tell that the item isn’t brand new. Working surfaces may show slight wear; for example, the bottom-inside of a Bosch mixer bowl may show swirl marks because Bosch mixer whips are designed to “float” against bottom of bowl. Non-working surfaces (cabinet, control panel) look essentially new. Carton may not be perfect.|

|DIS||These items have never been used but we no longer sell them at full price in our store because it was discontinued by us or by the manufacturer.|
|U||Has had light use.|
|SDB||Has moderate damage or blemish on a non-working surface, such as a scratch or dent in the housing, or paint blemish.|
|NOS||A brand new item that isn't the newest model.|

Some may not like the fact that this is a dedicated dough mixer. I was looking for an affordable one trick pony. The Famag checked all the boxes.23 out of 23 people found this review helpful. Did you?
By David B. in IL on 2/16/2019 - Verified BuyerFor the longest time I've been in search of the perfect bread mixer. I have many Kitchen Aid mixers of all sizes and have never been satisfied with them. I believe they were really designed for cakes and cookies mostly. I never really felt like I had the right tool for the job. I've taken various bread workshops and they always have spiral mixers. So it dawned on me that the right tool for the right job is a spiral mixer. I've had my eye on the first spiral mixer that PHG has stocked for a long time. It looks like a dandy unit but I hesitated because it did not have a breaker bar. Not that I'm an expert but all of other ones I've seen and used in bread classes had the bowl turning, the spiral hook twirling and a breaker bar. So one day I'm surfing the PHG site and I see this newcomer to the spiral mixer section. And I decide now is the time to jump in. I've only used it a couple of times so far, but it is a dream. Behaves just like the ones I've used at King Arthur and other classes I've taken. I'm still getting used to it. It has a variable speed instead of a 1 or 2 speed switch so you have more flexibility. I'll write more about it after I've used it for various kinds of dough. I want to use it for my high hydration doughs in the mid to high 70s, pizza, brioche, bagels, pretzels, rye, and various breads from J Hamelman’s book, the whole spectrum. At 77 lbs it's a beast but will not walk as KA mixers often do.14 out of 14 people found this review helpful. Did you?
By Rhonda P., TX on 1/4/2019 - Verified BuyerI was so happy when I received the email about this mixer, I whipped out my credit card and ordered mine that day. I’ve looked for a mixer that has a fixed breaker bar for a long time and all that were available were wired for European electricity. I make a lot of bagels and wanted a mixer that could handle low hydration doughs. I've made a few batches now and can say that it handled that stiff dough like it was butter. It’s quiet, I like the slow start, it doesn’t shimmy around-just gets with it. I was finally able to achieve that creamy dough look like you see in videos. I mixed a single batch, mixed great - and then up to 8 lbs. The dough doesn’t ride up on the hook. One giant plus is being able to take the bowl off to empty and clean it. I have several (okay four) of the larger and better known mixers and while a couple will do the job of mixing bagels if I stop and start, to keep the motors from breaking, the Famag excels and is powerful. It’s awesome, now I wish I had purchased the larger one.13 out of 13 people found this review helpful. Did you?
By John C. in DC on 12/8/2018 - Verified BuyerJust got my Famag. First run was twenty pounds of stollen dough. This starts out very dry, as most of the moisture comes from butter. The Famag didn’t blink. Just effortlessly mixed and kneaded. So, very happy so far. Raising the head is easy. Removing the bowl with 20 pound of dough was a little tricky, but worked out OK.13 out of 13 people found this review helpful. Did you?
By Roy F. in IL on 12/23/2018 - Verified BuyerMy experience with the FAMAG IM8S is grand. Works quietly kneading the dough perfectly up to 10 pounds at a time. I have never used a machine of this class. Extremely well built. The Italians have done it again!
My previous experience was with a VARIMIXER V5. It does a great job as well, but only half the capacity. If one needs a mixer this size, this is the one to buy. Best performance for very little money.
PLEASANT HILL GRAIN ARE GRAND FOLKS TO WORK WITH AS WELL. Thank you all for your service.10 out of 10 people found this review helpful. Did you?
By Adam M. in NH on 6/16/2019 - Verified BuyerAfter using another top-quality spiral mixer, I'm amazed at the superior performance of the Famag IM8S! For my usage, traditional Neapolitan and New York-style pizza dough, the breaker bar and wide-range variable speed control of the Famag IM8S are revolutionary. I'm still just learning the mixer, and I've produced my best dough ever. It's built like a tank, and I think it will stand up well to the test of time.
Pleasant Hill Grain was just great to deal with in the transaction, and they should be commended for carrying such unique specialty products in the US market!!7 out of 7 people found this review helpful. Did you?
By Peter A. in CA on 4/7/2019 - Verified BuyerThe short time I've had the Famag, I can say I made a brilliant purchase. I've gone through two Bosch Universals in about ten years. Thought it was the cat's meow. I'm relegating it to work with my easy bake oven. (Just kidding) The Famag produces the most fantastic dough I ever have made. A positive window pane test is achieved in a quarter of the time. It's also really easy to clean. I'll be back to buying my flour at 50#s a crack. This mixer has reignited my baking passion.6 out of 6 people found this review helpful. Did you?
By Chuck C. in AB on 11/13/2019 - Verified BuyerI took the plunge and decided to purchase the Famag IM 8S. Fairly new to the baking world but have been home baker for quite many years… Decided I wanted a commercial mixer to do all the work for me… Having a little bit of trouble with my high hydration doughs but I think that’s my issue not the machine's. The spiral action works hard… It’s fantastic… I waffled between this one or the Haussler Aplha Mixer. I decided to go with Famag. I have a Kitchen Aid to make cookies and whipped cream already so I didn’t want to fuss with getting extra options for the Haussler. The Famag is strictly for my bread and pizza doughs. And it works like a charm!5 out of 5 people found this review helpful. Did you?
By Adam S., CA on 5/6/2019 - Verified BuyerTerrific mixer. It's replacing another one speed spiral mixer that I've used for about ten years. The multi speed and the ability to remove the bowl are huge pluses. The metal safety guard is much more practical than the plastic safety guards, as the openings make it easy to add ingredients without stopping the machine and opening the guard. The mixer runs evenly, the speed adjustment works smoothly, and the mixer itself mixes the doughs excellently and seems to be really solid.5 out of 5 people found this review helpful. Did you?
By Eric M. in FL on 4/6/2019 - Verified BuyerI've wanted a real professional mixer for years. I purchased the largest Kitchen Aid and was disappointed. No real power and so loud, it sounds like a jet engine on a plane. This mixer is relatively quiet compared to a Kitchen Aid. When I made my first dough it felt like it was hand kneaded but only better! But it’s truly a bread maker's dream machine, it can make 20 pounds of dough in the 11.5 quart bowl. The bowl is very heavy stainless steel and will never warp while making a dry heavy dough. Sometimes my Kitchen Aid while mixing would actually flex with a dense dough. The only drawback is it’s 77 pounds! I needed to buy a wheeled table, no big deal. This is a great mixer, buy it if you love to make bread!5 out of 5 people found this review helpful. Did you?
