PROFESSIONAL DESIGN

Tilting or Fixed Head 

The Famag IM-8 mixer is available with either a tilting head that features a high lift drive and lift assist, or with a fixed head. The model with the fixed head is the IM-8, and the model with the tilting head and removable bowl is the IM-8S. The bowl is removable on the mixer with a tilting head, and is not removable on the mixer with a fixed head. 

If you're mixing high hydration doughs we recommend you purchase the tilting head/removable bowl mixer so it's easier to remove the dough from the bowl, and to clean the bowl. It's easy to remove low hydration dough from the fixed head mixer than it is to remove high hydration dough, and cleaning the bowl after mixing low hydration dough is easily done with the bowl attached to the mixer.

Artisan Breads

HIGH HYDRATION OR HEAVY DOUGH

Thanks to the spiral hook’s action, mixtures that overtax other designs—such as pizza or bagel dough—are handled easily, quickly and efficiently in the Famag spiral dough mixer. Doughs of all kinds, from heavy to high-hydration artisan doughs, come out smooth, silky and perfectly developed.

The Famag IM-8S HH mixer is identical to the standard IM-8S Famag mixer, except that it has a special sprocket that allows the mixer to run at a faster RPM. The spiral hook on this model runs at 130-312 RPM, while the hook on the standard IM-8S mixer runs at 98-245 RPM. Click here for the approximate RPM at each speed, for each model. The IM-8S HH mixer is designed specifically for high hydration dough (over 75% hydration). If you aren't planning to make a lot of high hydration dough, the mixer with the regular sprocket is a great option.

SUPER CAPACITY RANGE

Famag's IM-8 mixes and kneads up to 17.6 lbs. (8 kg) of dough at 60% hydration (or more at a higher hydration), but also handles batches as small as 2.6 lbs. (1.2 kg) equally as well. In terms of flour capacity, this is 11 lbs. (5 kg) down to as little as 1.6 lbs. (750 g) of flour. Capacity of the stainless steel bowl is 11.6 quarts (11 liters). The kneading arm of the Famag lifts high for bowl access and removal, and provides lift-assist.

Speed Based on Hydration 

Variable speed mixers have a speed dial marked from 1-10. For normal dough with a hydration of 55-65%, the mixer can be operated at speeds 1 through 5. With 65-75% hydration, at speeds 1 through 6-7, and with dough over 75% hydration, at speeds 1 through 8-10. These are general guidelines, as dough characteristics vary. If mixing dough that's less than 60% hydration, it's recommended to only fill the bowl to 50% capacity, and mix for only 10 minutes at a time; judgment must be exercised in any case, to avoid kneading dough so dry it’s outside of normal baking parameters, regardless of the hydration numbers. With dough over 60% hydration, dough can be mixed for up to 20-25 minutes before the mixer should be turned off for about 40 minutes.

FORWARD AND REVERSE MIXING 

There are two buttons on the Famag mixer for controlling the direction of both the dough hook and bowl. The left arrow button moves the spiral hook in a downward motion, and the right arrow button moves the hook in an upward motion. The left arrow button can be referred to as the “forward” direction while the right arrow button can be referred to as the “reverse” direction. 

Some users incorporate ingredients with the spiral hook turning in an upward motion, to reduce the amount of oxygen incorporated into the ingredients, and then switch to a downward motion to knead the dough. Others users prefer to mix with the hook turning in a downward motion from start to finish.

For the longest time I've been in search of the perfect bread mixer. I have many Kitchen Aid mixers of all sizes and have never been satisfied with them. I believe they were really designed for cakes and cookies mostly. I never really felt like I had the right tool for the job. I've taken various bread workshops and they always have spiral mixers. So it dawned on me that the right tool for the right job is a spiral mixer. I've had my eye on the first spiral mixer that PHG has stocked for a long time. It looks like a dandy unit but I hesitated because it did not have a breaker bar. Not that I'm an expert but all of other ones I've seen and used in bread classes had the bowl turning, the spiral hook twirling and a breaker bar. So one day I'm surfing the PHG site and I see this newcomer to the spiral mixer section. And I decide now is the time to jump in. I've only used it a couple of times so far, but it is a dream. Behaves just like the ones I've used at King Arthur and other classes I've taken. I'm still getting used to it. It has a variable speed instead of a 1 or 2 speed switch so you have more flexibility. I'll write more about it after I've used it for various kinds of dough. I want to use it for my high hydration doughs in the mid to high 70s, pizza, brioche, bagels, pretzels, rye, and various breads from J Hamelman’s book, the whole spectrum. At 77 lbs it's a beast but will not walk as KA mixers often do.

Just got my Famag. First run was twenty pounds of stollen dough. This starts out very dry, as most of the moisture comes from butter. The Famag didn’t blink. Just effortlessly mixed and kneaded. So, very happy so far. Raising the head is easy. Removing the bowl with 20 pound of dough was a little tricky, but worked out OK.

I was so happy when I received the email about this mixer, I whipped out my credit card and ordered mine that day. I’ve looked for a mixer that has a fixed breaker bar for a long time and all that were available were wired for European electricity. I make a lot of bagels and wanted a mixer that could handle low hydration doughs. I've made a few batches now and can say that it handled that stiff dough like it was butter. It’s quiet, I like the slow start, it doesn’t shimmy around-just gets with it. I was finally able to achieve that creamy dough look like you see in videos. I mixed a single batch, mixed great - and then up to 8 lbs. The dough doesn’t ride up on the hook. One giant plus is being able to take the bowl off to empty and clean it. I have several (okay four) of the larger and better known mixers and while a couple will do the job of mixing bagels if I stop and start, to keep the motors from breaking, the Famag excels and is powerful. It’s awesome, now I wish I had purchased the larger one.

My experience with the FAMAG IM8S is grand. Works quietly kneading the dough perfectly up to 10 pounds at a time. I have never used a machine of this class. Extremely well built. The Italians have done it again!

My previous experience was with a VARIMIXER V5. It does a great job as well, but only half the capacity. If one needs a mixer this size, this is the one to buy. Best performance for very little money.

3 Month Report: What I should have bought 40 years ago.

Like everyone else said, this is a great machine. Quiet, strong, no fussing with climbing dough or anything else. Just put the ingredients in, turn it on, and go about your business. In a few minutes, the dough is done. At this late stage in life, I had pretty much decided I could live with my Assistent Original and KA "Commercial" but there is no comparison when it comes to mixing dough, this is so much easier. And of course PHG's service and price were superb. Glad I "accidentally" saw this advertised on your website!

3 months later:
This mixer will quickly process any bread or cookie dough thrown at it. After decades of struggling with all-purpose mixers, this one is a real blessing when it comes to dough. The only thing I don't care for are the wing nuts that must be loosened and tightened whenever the head is raised and lowered. This would be tedious if one were using the mixer all day long but, in my case, I can live with it as I only use it a few times a week. Nothing like it for the price for mixing dough!

After using another top-quality spiral mixer, I'm amazed at the superior performance of the Famag IM8S! For my usage, traditional Neapolitan and New York-style pizza dough, the breaker bar and wide-range variable speed control of the Famag IM8S are revolutionary. I'm still just learning the mixer, and I've produced my best dough ever. It's built like a tank, and I think it will stand up well to the test of time.

Pleasant Hill Grain was just great to deal with in the transaction, and they should be commended for carrying such unique specialty products in the US market!!

The short time I've had the Famag, I can say I made a brilliant purchase. I've gone through two Bosch Universals in about ten years. Thought it was the cat's meow. I'm relegating it to work with my easy bake oven. (Just kidding) The Famag produces the most fantastic dough I ever have made. A positive window pane test is achieved in a quarter of the time. It's also really easy to clean. I'll be back to buying my flour at 50#s a crack. This mixer has reignited my baking passion.

I just did a test run of my sourdough bread formula scaled to work well in the Famag IM8S. The three loaves I produced and sold turned out, according to my customers, to be the best bread they had ever had. The only issue I have with the Famag IM8S is having to unscrew the two screws to release the head so that it can be raised to release the bowl for cleaning, This should be a pin of some sort instead of a screw bolt. Other than this one issue, I find this to be an amazing spiral dough mixer.
