Engineered expressly for ideal dough-mixing and kneading results, Famag spiral mixers feature a spiral agitator that remains stationary while the bowl rotates, bringing the dough to the stainless steel dough hook with each revolution. An integrated offset breaker bar ensures ideal metering of the dough into the spiral hook. This action is exceptionally thorough and uniform, while avoiding both overworking and overheating of the dough.

HIGH HYDRATION OR HEAVY DOUGH
Thanks to the spiral hook’s action, mixtures that overtax other designs—such as pizza or bagel dough—are handled easily, quickly and efficiently in the Famag spiral dough mixer. Doughs of all kinds, from heavy to high-hydration artisan doughs, come out smooth, silky and perfectly developed. We now offer the new HH (high hydration) IM-10S mixer with a special sprocket that allows the mixer to run up to 300 RPM; this version is designed specifically for mixing dough that's above 75% hydration.
Famag dough mixers feature heavy duty chain overhead drive, with a high torque dual-belt final drive.
FAG sealed industrial ball bearings are used for exceptionally long life. Construction is robust throughout,
as attested to by the mixer’s substantial 81.5 lb. weight. Epoxy powder coating over a steel cabinet

SUPER CAPACITY RANGE
Famag's IM-10 mixes and kneads up to 22 lbs. (10 kg) of dough at 60% hydration (or more at a higher hydration), but also handles batches as small as 3.3 lbs. (1.5 kg) equally as well. In terms of flour capacity, this is 13.8 lbs. (6.3 kg) down to 2.2 lbs (1 kg). Capacity of the stainless steel bowl is 14 quarts. Unlike inferior designs, the kneading arm of the Famag lifts high for bowl access and removal, and provides lift-assist.

Speed Based on Hydration
Variable speed mixers have a speed dial marked from 1-10. For normal dough with a hydration of 55-65%, the mixer can be operated at speeds 1 through 5. With 65-75% hydration, at speeds 1 through 6-7, and with dough over 75% hydration, at speeds 1 through 8-10. These are general guidelines, as dough characteristics vary. If mixing dough that's less than 60% hydration, it's recommended to only fill the bowl to 50% capacity, and mix for only 10 minutes at a time; judgment must be exercised in any case, to avoid kneading dough so dry it’s outside of normal baking parameters, regardless of the hydration numbers. With dough over 60% hydration, dough can be mixed for up to 20-25 minutes before the mixer should be turned off for about 40 minutes.

Variable speed mixers have a speed dial marked from 1-10. For dough with a hydration of 65% or higher, the mixer can be operated at any speed (1-10). For dough with a lower hydration, Famag recommends not exceeding speed 5.

I just did a test run of my sourdough bread formula scaled to work well in the Famag IM8S. The three loaves I produced and sold turned out, according to my customers, to be the best bread they had ever had. The only issue I have with the Famag IM8S is having to unscrew the two screws to release the head so that it can be raised to release the bowl for cleaning, This should be a pin of some sort instead of a screw bolt. Other than this one issue, I find this to be an amazing spiral dough mixer.
The Famag has raised the quality of my bread to a new level! Every single step in the process of making sourdough bread at home is important. This new mixer has solved the issues I previously had developing the dough/gluten during the early kneading stage. I can make larger batches of bread saving time and effort. I’ve only had the Famag for a few weeks and cannot wait to start using it for my very enriched doughs (panettone, brioche)... I’m sure I’ll have excellent results.
The quality of my bagels, rolls, sourdoughs has improved significantly. I have only had my Famag for a couple of months, but the difference in quality in the first batch was noticeable. Easy to use, EASY TO CLEAN. I bought this mixer because my bagels were giving my Kitchen Aid distress, but I had no idea how chewy my sourdoughs would turn out. My French rolls have the perfect crumb for meatball sandwiches, do not get soggy and do not split. Onion poppyseed rolls for hamburger and hot dog buns are amazing. I am going to need more flour.
This is my first spiral mixer. I had a Hobart planetary for years. I am mostly using this mixer for pizza dough. The texture is much more tender mixed this way. Two thumbs up!
I used to suffer for 30 min or so trying to make high hydration dough with my KitchenAid. Now, I make knead dough like a pro in 9 min. I made perfect pizzas at home!

I have had many mixers, but this is definitely the best of them all. Well thought out design and built like a tank! Super quiet and easy to operate. Go for the HH model and you can't go wrong.
I had to wait about couple months after I purchased the Famag spiral dough mixer 8sp. When it arrived I opened the box it was well packed no damaged. It is heavy and well made, attractive looking, compact. The safety system is so guaranteed anyone can use it without worrying. When it runs very quiet and easy to control the speed as you desire. The final finishing of the dough comes just like pumpkin shaped. So smooth. First I felt it very expressive but when you see the product it is worth it. It looks continue working for many years-without worry. It is good investment compared with other cheaper products with unnecessary heavy metal attachments and over sized. And noisy.
Having used spiral mixers in professional bakeries this one is a godsend for baking bread at home. Although KA Pros are great for baked goods it can't begin to compare to this mixer in mixing bread dough as it employs an approach very different from a planetary mixer with a dough hook. If you're going to be baking lots of bread at home, even as a hobbyist, I highly recommend this mixer.
