Mure & Peyrot Boulange Bread Dough Scoring Lame

Scoring your baguettes, boules and other artisan breads with a lame (pronounced “LAHM”) helps encourage better rising while proofing. The Mure & Peyrot Boulange lame is lightweight and ergonomically designed for both right and left-handed users.

The Mure & Peyrot 436.1 blade comes standard in the Boulange lame, and replacements are available here. The more durable 536.1 blade is sold separately and can be used in the Boulange as well. Blades are easy to change and are sharp on all four corners, which allows you to use a single blade in four positions, before you need to replace the blade. A removable protection cover for the blade is included.

Cook's Illustrated recommends the Mure & Peyrot Buolange lame. They commented on the unique handle saying it was the most secure and comfortable of all the lames they tested.

Häussler Bread Dough Stencil

Use the Häussler bread stencils to create attractive designs in your bread rolls and buns. Dough stencils are made of tinned steel and have a sturdy handle. Enjoy the unique look the Haussler dough stencils give your bread!

To use, form dough into smooth 2.5-4 ounce balls. Dip dough stencil in flour or melted butter, then press firmly into dough and remove. Cover dough and let rise in warm, draft-free place for 15-20 minutes. Bake until internal bread temperature reaches 200° F, about 20 minutes.

To give your bread a stenciled look, brush dough with an egg wash, milk or melted butter, then sprinkle on poppy seeds, sesame seeds, or other seed before pressing the dough stencil in, removing it, and then proofing the rolls.

If you want to achieve a fairly flat design on top, proof the dough upside down after you press the stencil in. Just before baking, turn the dough right side up again. If you'd like to use your stencil more like a lame, leave the dough right side up to proof and the dough will expand around the pressed design.

The Star stencil is great for making Austrian Kaiser rolls, and the Swirl stencil makes beautiful Mexican Conchas.

Works extremely well with all doughs

I had to make a decision between this mixer, the Ankarsrum and a Famag. All three mixers are getting great reviews and it seems each mixer is designed to be ideal for their country of origin.

The Famag coming from Italy has a permanently fixed spiral which is great for kneading strong gluten wheat doughs, the predominant dough used in Italy for bread, pizza and pasta.

The Ankarsrum from Sweden is probably the best mixer for rye doughs, the most popular grain in Nordic countries. Rye doughs can't form a gluten network and require more of a gentle mixing rather than kneading. Nobody beats Ankarsrum in doing this.

The Häussler is from Germany. According to the bread register of the German Institute for Bread (of course there is such a thing), there are now more than 3,200 officially recognized types of bread in the country. So the range of different grains (wheat, spelt, rye, emmer, einkorn etc. ) and flours (fine to very coarse, refined to whole) is huge and a mixer needs to accommodate all of them. As an example mixing a Pumpernickel dough with a spiral will not work very well, so the Alpha allows to switch to a paddle, which works great for this soft dough. As much as I would have loved to save money there was no alternative to the Häussler since I need the flexibility of different mixing attachments. I bake everything from classic wheat sourdough, to ancient grains, pizza, pasta, Pumpernickel and this mixer was the best choice for someone like me.

Great Mixer

Our friends have had a Häussler mixer for nine years. They use it at least three times a week and it still works like new. We have a mixer from a different company, not even half as old, and it started to break down already. We're pleased to have purchased the Häussler mixer.

Extremely good mixer

After working with a Bosch for seven years and making 70-80 loaves of bread each week, this mixer does a far better job in kneading and mixing our dough. We would recommend Haussler to anyone who does small scale baking like we do. I would never go back to a Bosch again, the Haussler does such a great job in mixing all kinds of dough.

Big upgrade

I've been making 25% to 50% whole wheat breads with my KitchenAid Commercial KSM7990 for years but came close to killing it on a recent batch (which would be the third time I killed a KA mixer). So I lost my mind and bought this Haussler. Made two batches of bread this past weekend and, well, the Haussler didn't blink an eye. It was quiet, stable, and smooth. The timer is really convenient. It cleans easily. I should have bought one years ago.

I recommend buying the food-safe lubricant as well.

Best mixer ever

I've had four mixers, all well know brands, but now I've found the one that gets the job of mixing dough done! The Haussler plows through bagel dough like a beast, never slowing down or taxing the motor. I'm beyond happy that I purchased this mixer. I can now sell the Bosch, Ankarsrum and Kitchen Aid.

Great Mixer

The Haussler Alpha mixer is simply the best dough mixer I have ever owned. I used to have a Bosch Universal. The construction center post was terrible, in that high hydration doughs stuck to it which negated the kneading action. In addition, the top of the post had many grooves which made it hard to clean.

The Haussler makes all kinds of doughs easy to knead. I have made a slack sourdough, a sturdy whole wheat, hard-to knead onion rolls and a sour rye. The Haussler handled all of them easily and beautifully. The machine is EXTREMELY easy to clean; I clean it in less than 5 minutes. The quality of the kneaded dough is far better, smoother and able to pass the "window pane" test than any other dough I have worked with.

Is the Haussler worth the money? Obviously, the answer depends on several factors such as your budget, how often you bake bread and what you're willing to spend for the best. I for one, am convinced it is worth the money and I am extremely happy I bought one.

The Journey is Over

There isn't much to say except this is simply the best mixer for bread. End of story. I started with the Hobart N50 which is amazing but too small, really, for the quantity I make (although it certainly has the power). Then I went to the Electrolux Kitchen Assistent which is also a great mixer but again, not the right size or power. Finally, this is the right mixer in terms of power, size, and productivity.

Absolutlely the best mixer

This is absolutely the best mixer for home or small commercial use. I made a huge batch, over 2Kg, of baguettes that were easier to shape than ever before. I made Pain de Campagne and the taste, believe me or not, was far better due to this mixer. I'm able to make higher hydration doughs with this mixer with no problems; 75% hydration. The mixing time for the high hydration doughs are definitely less than 10 minutes. This mixer gives the dough the proper amount of air, dough strength, and gluten structure. Please note that sometimes the dough does ride up the hook.

Moderator : Andrew, we believe you'll find, as others have, that adding more of your recipe's liquid earlier in the process will produce the results you want while preventing dough from climbing the hook. Thanks for your review!

Built like a tank!

It is certainly an expensive dough mixer, but after receiving and unpackaging the Haussler Alpha, shipped expediently by Pleasant Hill Grain, the value of the cost becomes readily apparent... this dough mixer is simply designed to task, and built to last.

I have only just begun using the mixer, but I foresee a long and productive usage in our dough mixing future, and this product reinforces my core belief that when you buy quality, you only cry once!
