#10 cans are coated internally with food-safe anti-corrosion coating. The cans are airtight sealed and oxygen-free for long term storage. Please note that the term "#10 can" designates a "Number 10 Can" which is a standardized can size, and does not refer to a "quantity of ten cans."

First, the basics: it mixes well into both wet and dry applications; no, it doesn't have the tartness or density or fresh buttermilk (it mixes up as approx. regular powdered milk). It tastes great, plain (yes, I of course HAD to try it as "milk"). Baking-wise (it's main purpose, per label), I've used it in pancake batter and with bread flour to make buttermilk bread. In the bread, it had a mild, almost-there taste (up to 4T [= approx 2 cups milk] in 3.5C flour) but did soften the texture of the resulting bread and added, for lack of better term, some "umami" taste - the bread was great-tasting. Also of course adds some nutrients. I added only a marginal amount of extra water into the dough for simple rehydration, based on prior experiments I have done with powdered whey-augmented bread. The lack of tartness means I probably wouldn't use it as a marinade for chicken, as I sometimes do with fresh buttermilk, but I think an experiment with some vinegar or lemon juice plus this powder might be interesting. I have also been experimenting with it as a salad dressing base, working on getting a thicker consistency for that. Check back in a few months. Net-net: good product, good quality, seems flexible, and I'd likely buy it again.
Use this often in cornbread and bscuits. Of course this power can be used anywhere you need buttermilk. Mixes up easy. Glad I purchased it very handy.
I love this buttermilk for making homemade breads, it's wonderful. Try it you'll like it, the small cans in the supermarket are not nearly as good as this product.
I make buttermilk pancakes every weekend for my son. I used to culture my own buttermilk so it would be fresh. One weekend, I had the powdered buttermilk in my food storage and decided to try it. It was so good and so easy that I gave up fermenting my own.
