The Ankarsrum Original's clear, BPA-free whisk beater bowl will create beautiful meringues, beating up to 18 egg whites—or as few as one—with excellent results. You can also cream butter, margarine and shortening with sugar to the creamiest texture for all your cookie needs. When the clear bowl is used, it’s stationary (the stainless bowl turns during use), and the whisks drive from below via a center column in the bowl (the clear bowl is shaped something like a bundt cake pan.) This arrangement provides total access to the top of the Ankarsrum Original's bowl, with no overhead motor drive in the way. When mixing with either bowl, the only metal in contact with your food is food-grade stainless steel.

Using the stainless bowl, the Ankarsrum Original mixes and kneads smooth, silky, elastic dough quickly and easily with its unique roller and scraper design. This method effectively mimics kneading by hand, without the time and effort. As the stainless bowl revolves, the deeply fluted roller acts as your fingers, with the scraper mimicking the palm of your hand. The scraper folds the dough with a rhythmic motion while the roller provides a powerful massaging action. Your dough comes out smooth and elastic, in large or small batches. The biggest difference between dense, heavy baked goods and delightfully textured products is proper development of the gluten in the dough.
The large 7.5 quart stainless steel bowl of the Ankarsrum Original holds up to 18 cups (~5.3 lbs) of flour, enough to make approximately 10.75 pounds of bread dough, which will make five to seven loaves in 8" loaf pans. The efficient, high-torque 600 watt motor runs smoothly and quietly; coupled with an advanced transmission design, it provides ample power to mix and knead even the largest batch of heavy bread dough without straining. The Ankarsrum Original was nicknamed "The Workhorse Mixer" not by its maker but by users who praise this powerful kitchen helper that's so enjoyable to use.
Any speed from 40 to 190 RPM can be selected, and an electronic speed sensor automatically adjusts motor torque to the load. My primary reason for selecting this machine is for bread doughs. My first bread dough had a hydration of 68%. The mixer handled it effortlessly. But the real test came when I made bagels. The recipe said to take it out of the mixer when the mixer got hot (presumably with a KitchenAid) and knead 10 more minutes by hand. I was able to finish the dough in the Ankarsrum without any intervention other than removing the bowl scraper because it started to interfere with the kneading action of the roller. I have yet to use the other attachments other than for testing, but I will update my review when I do. Over all, I'm am pleased with the choice I have made and think it's worth the price tag of a machine that will probably give me years of service.49 out of 49 people found this review helpful. I've made a dozen loaves of bread so far. Artisan old world Italian bread and cinnamon raisin bread. This machine handled volume and load without breaking a sweat. Give your KitchenAid to a friend who makes cupcakes and get the Ankarsrum if you are serious about working with larger volumes of heavier dough such as bread making. I will do a follow up review in three months.

The learning curve isn't as steep as I was led to believe, but I do have to rework certain recipes and figure out when it is best to add which ingredients. You actually require less flour and the dough is ready for its rise much more quickly than with my Bosch. And it is SOOO quiet. Also, despite the fact that it weighs far less than the Bosch or the KitchenAid, it is incredibly stable. This one doesn't go for walks across the counter.
Although the components are largely dishwasher safe, I've found that it's better to wash them by hand simply because of their shape. Nonetheless, it's still easier to clean than my Bosch was. My only complaint is the lip at the top of the bowl. Because it curls inwards, dough catches there.
We'll see how it does with cakes and cookies, though I've been forewarned to make sure that butter and cream cheese need to be well-softened before creaming.33 out of 33 people found this review helpful. Did you?

Exceptional build quality. Beautiful fit and finish! Internet images may convey that it looks somewhat like a toy. Absolutely no way!!! The “Ank” is indeed a very serious machine, one most worthy of its premium price vis-a-vis most other current consumer market alternatives. I purchased it to replace my nearly 40 year old KitchenAid mixer (K45 made by Hobart) that finally passed away. My first thought was to simply buy a new KitchenAid since mine did such a great job for so many years. Glad that I didn’t after reading numerous reviews of present day KitchenAid reliability and service issues. It turns out that today’s KitchenAids are no equal to those of 40 years ago. Plus, I needed a mixer with a higher flour/dough capacity.
The “Ank” mixes heavy dough—sourdough, bagel, challah—as if it were empty. No strain, not even a whimper.
I couldn’t be happier with my purchase through Pleasant Hill Grain. They managed to deliver it 11 days earlier than originally stated. Very satisfied.
Then the Ankarsram Assistent Mixer. It was a bit more expensive than most of the others, but starting with the packaging, it was obvious why. It was triple boxed and arrived totally undamaged. This mixer is one of those things that justifies its price. I am in the aerospace industry and qualified to say that this is a well-built appliance. It is a quality unit, with excellent fit, finish and materials. The painted surfaces are glossy and the paint looks deep. FYI, black chrome is not black and chrome, it is a medium dark grey, like black-chrome. In the pictures on line it looked black, but I rolled the dice and really like the color. I have tried several recipes, varying in size, up to a challa bread recipe which took nearly 5 pounds of flour, and it didn't even strain. As mentioned on various blogs and videos there is a learning curve, but mainly figuring out existing recipes as they are adapted to this mixer. No big deal. I bought this primarily to make bread and have not tried the small bowl and mixers yet, so I cannot comment on them. First, the mixer arrived in great condition and is beautiful. Not only beautiful, but seems to be very well made. The dough hook looks like it would last forever as does the base and stainless steel bowl. I love the Quick Start Guide provided by Pleasant Hill. I found it more helpful than the Ankarsrum user guide. However, the Ankarsrum video tutorials are very helpful too. I made a batch of cookies and now I know why I wanted this mixer. I had an old stand mixer that I almost never used. When I saw this mixer online I wanted it but had trouble justifying the price because I so rarely used my old one. So I dragged out the old one and made cookies. It turns out that it is a pain to use because you have to stop it all the time and lift out the beaters to add anything. Then when you scrape the beaters it takes forever and the final clean up is a pain. It just seemed faster to make a batch of cookies by hand with a dough whisk which is what I usually did. The Ankarsrum is so much easier to use. You can see what is happening better, the roller is so easy to clean during and after the mixing, and the creaming process produced a much nicer mixture.
