The Ankarsrum Original stand mixer has been revered for decades by cooks who want extraordinary performance from their principal kitchen machine. The Ankarsrum AKM 6230 model includes two bowls: A 7.4 quart stainless bowl, and a clear, BPA-free beater bowl with a usable capacity of 4.5 quarts.
From Meringues to Challah
The clear double beater bowl produces beautiful meringues, beating up to 18 egg whites—or as few as one—with exceptional results. The beater bowl is also perfect for mixing light, pourable batters, and for creaming butter, margarine, and shortening with sugar to the creamiest texture for all your cookie needs. The clear bowl is stationary, and the whisks are driven from below via a center column in the bowl (the clear bowl is shaped something like a bundt cake pan, as you can see in the images above). This arrangement provides completely open access to the top of the bowl, with no overhead motor drive in the way. The stainless bowl with roller and scraper is ideal for making all kinds of bread dough, pizza dough, and thick cookie batters! When mixing with either bowl, the only metal in contact with your food is food-grade stainless steel. Made of Tritan Copolyester, the mixer's clear bowl can withstand even boiling liquids without warping.
Using the stainless bowl, the mixer kneads smooth, silky, elastic bread dough quickly and easily with its unique roller and scraper design. This method effectively mimics kneading by hand, without the time and effort. Thanks to this gentle approach, the Ankarsrum is exceptional for kneading rye bread, since rye has a very weak gluten structure and can become extremely sticky if mixed too aggressively. The stainless bowl revolves as the mixer runs, and as it turns, the deeply fluted roller acts as your fingers, with the scraper mimicking the palm of your hand. The scraper folds the dough with a rhythmic motion while the roller provides a powerful massaging action. From very large batches to very small, your dough comes out wonderfully smooth and elastic. The biggest difference between dense, heavy baked goods and delightfully textured products is proper development of the gluten in the dough, and the powerful AKM 6230 mixer is a master of kneading technique.
Capacity
Both bowls are ideal for large batches as well as small. As noted above, the beater bowl will whip anywhere from one to 18 egg whites into a beautiful meringue. The large 7.4 quart stainless steel bowl holds up to 6.6 lbs of flour, enough to make approximately 11 pounds (5 kg) of bread dough, which will make six loaves in 8" loaf pans. It also works wonderfully well with batches of dough as small as 2.2 pounds (1 kg). The efficient, high-torque 600 watt motor runs smoothly and quietly, providing ample power to mix and knead even the largest batch of low hydration bread dough, like challah, or a triple batch of stiff cookie batter without straining. This mixer was nicknamed "The Workhorse Mixer" not by its maker but by users who praise this powerful kitchen helper that's so much fun to use.
Variable Speed & Timer
Any speed from 40 to 180 RPM can be selected, and an electronic speed sensor automatically adjusts motor torque to the load. The mixer's advanced transmission features a belt drive that transmits power more efficiently than common gear drives—producing more usable power than mixers with much higher wattage ratings. This advantage becomes even more pronounced over time as the lubricant in typical gear driven mixers dries to a sticky paste, and most doesn't even stay between the gear teeth. Look inside such a machine after a few years and you'll see grease in abundance, except where it's really needed. Ankarsrum stand mixers, in contrast, maintain their higher efficiency and power for years and years.

A timer is standard equipment, so this mixer will do its work quietly and expertly while you attend to other tasks. The control panel is angled for comfortable use, and the large timer and speed controls are attractive and easy to read.
Size & Weight
The AKM 6230 mixer measures 13.5"H x 10.5"W x 15.7"D and weighs 19 lbs. with stainless bowl. It sits firmly on solid rubber feet, and won't walk on the countertop during use. This mixer has a manufacturer's warranty covering the motor and drive train for seven years, and all other parts for one year.

I love my new mixer. I can mix enough dough in the large stainless bowl to make several loaves of bread; with my Kitchen Aid it was impossible. I especially like the scraper feature and the lid. I can proof my bread in the same bowl as mixed in. I recently recommended this mixer to a friend who also owns a Kitchen Aid and she was as impressed with the features as I was. I should have bought this sooner.
Especially great for bread dough (I've had more success with the roller attachment than the dough hook). Open top makes adding ingredients a snap. After breaking the gears in my Pro Kitchen Aid so many times, I decided to try this unusual mixer. Solid construction, and beautiful too. I like the whisk attachments for light mixing. Very clever design.
I took a long time to finally decide to buy this mixer. The design was different from any I'd used, and the price was higher. But I'd been through KitchenAid, Cuisinart and Breville and was still unhappy. This is the absolute best I've ever used. The design is brilliant, it takes on small jobs and big, and there is hardly any mess to clean up due to the brilliant design! I love this mixer, and recommend it highly. I'm looking forward to years with it. Kneads dough like a charm, mixed my cakes well with no problems, can handle the tiniest job or the biggest and is a joy to work with.
I have only had my mixer a week but have done three very different doughs and bakes so I have some appreciation of the Ankarsrum mixer. Since attending bread classes at the San Francisco Baking Institute I have wanted a spiral mixer both for capacity and bread characteristics. When the gears on our Kitchen Aid started groaning on my bread dough I decided it was time. (Note: I have a wood fired oven and need about 12 to 15 pounds of dough as a minimal batch so big batches are helpful. )
First impressions of the Ankarsrum mixer are quite positive. While I am still tuning my process it is clear the dough mixes well and is kneaded more gently and with less aeration than a conventional mixer. To date my doughs have generally been underdeveloped but that is just fine tuning. Experience so far suggests the results with this mixer will be quite predictable and that is a blessing.
I love that it doesn't walk like conventional mixers. And I like the range of speed control and the timer which give more freedom to your baking process.
Two cautions. Heavy bread doughs like to grab scrapers And utensils so TURN IT OFF when you put any object inside the bowl. Also, treat the scraper with care to protect the scraping edge of the blade. It can be nicked somewhat easily which I did. On the plus side a little rubbing on a fingernail smoothed it back up and it is working perfectly.

This is my first stand mixer. After careful consideration and many hours of research, I finally decided on the Ankarsrum. My primary reason for selecting this machine is for bread doughs. My first bread dough had a hydration of 68%. The mixer handled it effortlessly. But the real test came when I made bagels. The recipe said to take it out of the mixer when the mixer got hot (presumably with a KitchenAid) and knead 10 more minutes by hand. I was able to finish the dough in the Ankarsrum without any intervention other than removing the bowl scraper because it started to interfere with the kneading action of the roller. I have yet to use the other attachments other than for testing, but I will update my review when I do. Over all, I'm pleased with the choice I have made and think it's worth the price tag of a machine that will probably give me years of service.
This is a very heavy duty mixer that excels at large batches of bread dough. What I really like about it is that it's easier to add ingredients. With a Kitchen Aid the mixer head is in way on top and you have to stop and raise it out of the way to add ingredients. With the Ankarsrum that isn't necessary. I think the quality is better than a Kitchen Aid as well. With my Kitchen Aid the bowl kept disconnecting. I use the Ankarsrum every week and I think my breads and pastries are very good. It's expensive but I would get it again.
So far, I've loved the mixer for making bread. The learning curve isn't steep as I was led to believe, but I do have to rework certain recipes and figure out when it is best to add which ingredients. You actually require less flour and the dough is ready for its rise much more quickly than with my Bosch. And it is SOOO quiet. Also, despite the fact that it weighs far less than the Bosch or the KitchenAid, it is incredibly stable. This one doesn't go for walks across the counter.
Although the components are largely dishwasher safe, I've found that it's better to wash them by hand simply because of their shape. Nonetheless, it's still easier to clean than my Bosch was. My only complaint is the lip at the top of the bowl. Because it curls inwards, dough catches there.
We'll see how it does with cakes and cookies, though I've been forewarned to make sure that butter and cream cheese need to be well-softened before creaming.
Was a little afraid to use this mixer, but when I got it home, it was a breeze to operate. Finally was able to make my sweet bread - the whole batch at once - without the mixer walking across my counter. Couldn't do it with my Kitchen Aid. Worth the price!
Rock solid mixer - won't burn out or jump gears like a Kitchenaid. I do very heavy doughs in mine with no problems. Whisker is super fast but having the gear in the center of the whisking bowl is a nuisance. Would love to see a stainless whisker bowl instead of plastic. Love my attachments and have ground countless pounds of meat for sausage. Is it worth the money? Well, I've gone through 3 Kitchenaids in the same amount of time as one of these, which still hasn't broken, so financially I would say yes.
I appreciate rock solid, well built machines and am more than pleased with my purchase. I am actively avoiding buying anything made in China, as difficult as that sometimes appears. The learning curve is slight and operating the mixer quickly becomes intuitive. I'm now set up to bake everything I desire from scratch and we're very happy with the results.
