Bosch ER1 Stainless Bowl for Universal

This Original-Style Stainless Steel Bowl (model MUZ6ER1) uses a special dough hook that drives from the bottom of the bowl. This bowl comes with its own dough hook, which does an outstanding job of kneading. The bottom-drive design provides a little extra dough capacity because there is no center column as in the standard bowl. This stainless bowl also includes splash ring and center cover.

The ER1 bowl has been in service for 35+ years and is designed specifically for kneading a large volume of very low hydration dough, like challah or bagel dough. A full 14 lbs of dough with a hydration as low as 40% can be kneaded in the ER1 bowl. We recommend kneading no more than 10 lbs of this low of hydration dough in the center-column stainless mixing bowl that comes with the Bosch Universal because the center column wasn't designed to handle large batches of very low hydration dough.

The bowl fits on the Bosch Universal mixer's low speed drive (the same place the standard plastic mixing bowl mounts). Whips, whisks and cookie paddles cannot be used with this bowl because it's built without the center drive column. The bottom drive shaft pops out of its socket with a smack from the palm of your hand, for easy cleaning. Putting a drop of vegetable oil on the O-rings after washing will make them last a long time.

Capacity is 6.5 quarts (approx. 14 lbs. of dough).

Important note: To use this bowl on the Universal Plus mixer or the NutriMill Artiste mixer, you'll need to use some small user-supplied rubber bumpers that can be picked up at any hardware store, to prevent wobble. ( See here.)
