It is certainly an expensive dough mixer, but after receiving and unpackaging the Haussler Alpha, shipped expediently by Pleasant Hill Grain, the value of the cost becomes readily apparent... this dough mixer is simply designed to task, and built to last.

If you're an artisan home bread baker, I have tried many mixers and this one is the winner. It makes the most beautiful stretched gluten dough, efficiently, quietly and looks beautiful on your counter. The bread dough is just fantastic. It's making beautiful bread.
I had some dough ride up on the hook so I cut a circle about 1.5" bigger in diameter than existing guard, from a flexible plastic cutting sheet. I cut into it halfway and cut a small circle in the center then taped closed the cut, leaving about a quarter inch untaped where it meets the center small circle, so it would slip past the hook's locking pins. With this added, my mixer is perfection.

There isn't much to say except this is simply the best mixer for bread. End of story. I started with the Hobart N50 which is amazing but too small, really, for the quantity I make (although it certainly has the power). Then I went to the Electrolux Kitchen Assistant which is also a great mixer but again, not the right size or power. Finally, this is the right mixer in terms of power, size, and productivity.Was this review helpful to you?
I've been baking Euro style bread at home for more than ten years. To put my review in perspective, I'll try to describe what I use the kneader for and what lead me to choose the Haussler Alpha to help you decide whether it's worth looking into buying one yourself.
My typical dough is about 6 lbs (2kg flour/1.3 liters water, 40g salt, 25g instant active dry yeast). The Alpha is perfect for this amount. I can now make the best quality dough I've ever made in about 15 minutes. I started out using a KitchenAid 600, broke two sets of those plastic gears, then went to a used Hobart 20qt. The Hobart was OK, but couldn’t knead smaller doughs or with the larger ones, the dough constantly started climbing up the hook and you end up spinning the dough and having to operate the bowl up and down to make it work.
I've used the Alpha now for two weeks and it’s making the nicest doughs ever. The doughs are robust but elastic and smooth. Pastry dough turns out beautifully as well, and best of all is the timer and two speeds. So far, no size dough I've made climbs up the hook thanks to the hook design and revolving bowl. The bowl size is perfect, I can let the dough rise in it right after kneading. I'm very, very happy. Buying from Pleasant Hill Grain was flawless too!Was this review helpful to you?
