The einkorn flour called for throughout this book is either all-purpose flour, sifted whole grain flour, or 100% whole grain flour. Substituting whole grain flour for the AP flour works for us, but to make up for the extra absorption of whole grain flour over AP flour, we add 5% more liquid than the recipe calls for.
