The book includes a brief history of einkorn, an overview of its health benefits, tips on how to use and store it, and over 100 easy-to-follow recipes all featuring this ancient grain. Recipes are broken into sections including breakfast, appetizers, breads, main dishes, and desserts.

The einkorn flour called for throughout this book is either all-purpose flour, sifted whole grain flour, or 100% whole grain flour. Substituting whole grain flour for the AP flour works for us, but to make up for the extra absorption of whole grain flour over AP flour, we add 5% more liquid than the recipe calls for.
