Zest

  1. n. Shaved peel of citrus fruit. Zest may be used to flavor baked, cooked, or raw food as well as beverages. It’s popularly used in sweet pastries, candy, and marmalades, as well as in savory rice dishes. Zest may be used fresh, dried, pickled, or candied.
